BeWell Bites Family Meal

On December 8th, 2018, BeWell hosted our first BeWell Bites event!

We came together with BridgeUP scholars, families, and friends, and spent time preparing and trying new foods. We enjoyed the opportunity to meet everyone who came, and we’re looking forward to more events like this in the future!

Here are some of the recipes we prepared together:

Tzatziki Yogurt Dip


  • 32 oz plain low-fat Greek yogurt
  • ½ of an English cucumber
  • 1 clove garlic, pressed
  • 1 lemon, juiced
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp chopped fresh dill
  • 1 tsp salt
  • 1 tsp pepper


Step 1: Leaving the skin on, grate the cucumber

Step 2: In a large bowl, mix together the yogurt, grated cucumber, pressed garlic, juice of the lemon, olive oil, chopped dill, salt and pepper

Step 3: Refrigerate the tzatziki so the flavors can blend

Enjoy with vegetables or pita chips!

Healthy Zucchini Lasagna


  • 1 cup low fat mozzarella cheese, shredded
  • 1 cup low fat cottage cheese
  • 3 tbsp tomato paste, canned, low sodium
  • 1 cup tomato sauce, canned
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 cup onions, diced
  • 2 cloves fresh garlic, minced
  • 1/4 tsp black pepper, ground
  • 1 zucchini, fresh, thinly sliced
  • 6 sheets oven-ready lasagna noodles
  • 1 tbsp shredded Parmesan cheese
  • Nonstick cooking spray


Step 1: Preheat oven to 350° F

Step 2: Set aside 1/3 cup of mozzarella cheese for later

Step 3: Make cheesy tomato sauce: combine remaining mozzarella, cottage cheese, tomato paste, tomato sauce, oregano, basil, onions, garlic, and black pepper in a bowl

Step 4: Divide zucchini evenly into two parts, about 3/4 cup

Step 5: Lightly coat a medium baking dish with nonstick cooking spray

Step 6: Assemble the lasagna:

First layer: Spread a layer of cheesy tomato sauce evenly on the bottom of the pan. Cover sauce with 3 sheets of lasagna noodles. Cover noodles with a layer of zucchini.

Second layer: Repeat first layer.

Third layer: Top layers 1 and 2 with the remaining cheesy tomato sauce and finish by sprinkling the reserved mozzarella and Parmesan cheese.

Step 7: Cover tightly with foil and bake about 30 minutes.

Step 8: remove from oven, remove foil and bake uncovered until cheese starts to brown slightly, about 15 minutes.

Step 9: Let lasagna stand at least 10 minutes before serving.

Healthy Tres Leches Cake


1 package Butter Pecan cake mix

1 cup milk

1/2 cup coconut oil

1 cup combination of 2 non-dairy milks (cashew, soy, coconut, almond)

1 can of condensed milk

Your favorite toppings, including fruit/puffed quinoa/amaranth/nuts


Step 1: Prepare cake according to box instructions, but substitute the water for milk and the vegetable oil for coconut oil

Step 2: After the cake is baked, have some fun poking holes all over it

Step 3: In a separate container, mix the condensed milk with your pick of 2 extra milks

Step 4: Once you have blended all the milks together, pour it over the cake

Step 5: Allow the cake to absorb the milks while being refrigerated.

Step 6: When you are ready to serve it, decorate with your favorite toppings and enjoy!
