Ingredient Spotlight: Eggs
Microwave scrambled egg:
Beat eggs, milk, salt and pepper in microwave-safe bowl until blended. microwave on HIGH 45 seconds: stir. microwave until eggs are almost set, 30 to 45 seconds longer.
Open Faced Breakfast Sandwich:
Heat vegetable oil in a pan and fry the egg with a sprinkle of salt and pepper. Spread mashed avocado over a piece of toasted bread. Place the egg on top of the avocado and two tomato slices on top of the egg.
Egg Muffins: Combine 2 eggs and ¼ cup milk and whisk well. Stir in 1/2 cup of cheese, 2 pieces cooked bacon, ½ cup spinach, salt and pepper. Pour the mixture in a microwave-safe glass bowl. Top with extra cheese. Put in microwave for 4 mins until centers are set and the top is beginning to brown
